Ingredients (Serves 2-4)
For the Caramel 

¼ cup granulated sugar
1 tbsp water
For the Custard 

3 large egg yolks 

½ cup sweetened condensed milk
½ cup evaporated milk 

½ tsp vanilla extract 

Pinch of salt

Instructions


In a small pan, heat sugar and water over medium-low heat.
Stir gently until the sugar dissolves and turns a deep golden amber color.
Quickly pour the caramel into two small ramekins or a 5-inch baking dish, swirling to coat the bottom.


In a bowl, whisk together egg yolks, sweetened condensed milk, evaporated milk, vanilla, and salt until smooth.
Strain the mixture through a fine sieve to remove bubbles for an ultra-smooth texture.


Pour the custard over the hardened caramel in the ramekins.
Cover each ramekin with foil to prevent water from getting in.
Place them in a baking dish and fill with hot water halfway up the ramekins (water bath method).
Bake at 325°F (163°C) for 30-40 minutes, or until the flan is set but slightly jiggly in the center.


Let the flan cool completely, then refrigerate for at least 2 hours (overnight for best results).
Run a knife around the edges and invert onto a plate to let the caramel flow over the flan.


Spoon into creamy, caramel goodness and enjoy every silky bite!
