Divide the batter evenly between the pans and bake for 20-25 minutes. Let cool completely.
In a bowl, beat mascarpone, heavy cream, powdered sugar, and vanilla until thick and creamy.
Brush each cake layer with the cooled espresso mixture.
Spread a layer of mascarpone filling on one cake, place the second cake on top, and repeat.
Pipe extra mascarpone cream around the edges for decoration.
