Tzatziki Chicken & Veggie Naan Pizza
Ingredients:
1 cup cooked chicken, shredded or chopped
1/2 cup tzatziki sauce, homemade or store-bought
1 small red onion, thinly sliced
1/2 cup cherry tomatoes, halved
1/2 cup kalamata olives, pitted and halved
1/2 cup feta cheese, crumbled
1/4 cup fresh spinach leaves
1 tablespoon olive oil
Salt and pepper to taste
Fresh dill or parsley, chopped (for garnish)
Directions:
Preheat your oven to 400°F (200°C).
Place the naan breads on a baking sheet. Spread a generous layer of tzatziki sauce over each naan, leaving a small border around the edges.
Scatter the cooked chicken evenly over the tzatziki. Follow with red onion slices, cherry tomatoes, kalamata olives, and crumbled feta cheese.
Lightly drizzle olive oil over the toppings and season with salt and pepper.
Bake in the preheated oven for about 10-12 minutes, or until the edges of the naan are crisp and golden.
Remove from the oven and immediately add fresh spinach leaves. The residual heat will slightly wilt the spinach.
Garnish with chopped fresh dill or parsley before slicing.
