Tropical Fruit Salad Cheesecake 

Ingredients:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/2 cup heavy cream
- 1 cup diced mango
- 1 cup diced pineapple
- 1 cup diced kiwi
- 1 cup sliced strawberries
- 1/4 cup mango or pineapple jam
Directions:
1. Preheat the oven to 350°F.
2. Mix graham cracker crumbs with melted butter and press into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
3. In a large bowl, beat cream cheese with sugar and vanilla until smooth. Add eggs one at a time, beating well after each addition. Stir in sour cream and heavy cream.
4. Gently fold in diced mango, pineapple, kiwi, and strawberries.
5. Pour the filling over the cooled crust.
6. Bake for 50-60 minutes until the center is almost set. Let the cheesecake cool completely.
7. Spread mango or pineapple jam on top and refrigerate for at least 4 hours before serving.
