Blackberry Cheesecake Recipe
Ingredients
For the Crust:
1 ½ cups graham cracker crumbs
1/4 cup granulated sugar
For the Cheesecake Filling:
24 oz (3 packages) cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
1 cup sour cream
3 large eggs
For the Blackberry Topping:
2 cups fresh blackberries
1/2 cup granulated sugar
2 tbsp cornstarch
1/4 cup water
1 tbsp lemon juice
Directions
Making the Crust:
Preheat the Oven:
Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
Make the Crust:
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.
Form the Crust:
Press the mixture firmly into the bottom of the prepared springform pan. Use the bottom of a glass or measuring cup to pack it down tightly.
Bake the Crust:
Bake in the preheated oven for 10 minutes. Remove from the oven and let it cool slightly while you prepare the filling.
Making the Cheesecake Filling:
Beat the Cream Cheese:
In a large bowl, beat the softened cream cheese and granulated sugar together on medium speed until smooth and creamy, about 2-3 minutes.
Add Vanilla and Sour Cream:
Add the vanilla extract and sour cream, and mix until fully combined.
Add Eggs:
Add the eggs one at a time, beating on low speed after each addition until just combined. Do not overmix.
Pour the Filling:
Pour the cheesecake filling over the cooled crust, spreading it out evenly.
Baking the Cheesecake:
Bake:
Bake in the preheated oven for 60-70 minutes, or until the center is set and the edges are lightly browned. The center should still have a slight wobble.
Cool:
Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour. This helps prevent cracking. After an hour, remove the cheesecake from the oven and let it cool completely at room temperature. Then refrigerate for at least 4 hours, preferably overnight.
Making the Blackberry Topping:
Cook the Blackberries:
In a medium saucepan, combine the blackberries, granulated sugar, cornstarch, water, and lemon juice. Cook over medium heat, stirring frequently, until the mixture thickens and the blackberries break down, about 5-7 minutes.
Cool:
Remove from heat and let the topping cool to room temperature.
Assembling the Cheesecake:
