Slow Cooker Roast Lamb Leg 
Ingredients:
• 4 lb lamb leg, bone-in
• 1 tablespoon fresh rosemary, chopped
• 1 tablespoon fresh thyme, chopped
• 1 teaspoon dried oregano
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1/4 cup olive oil
• 1 cup beef broth
• 1 large onion, sliced
• 2 carrots, chopped
• 2 potatoes, quartered
Instructions:
1. Make small incisions all over the lamb leg and insert the garlic slices.
2. Rub the lamb with rosemary, thyme, oregano, salt, pepper, and olive oil.
3. Place the onion, carrots, and potatoes at the bottom of the slow cooker.
4. Pour the beef broth over the vegetables, then place the lamb leg on top.
5. Cook on low for 8-10 hours or on high for 4-5 hours until the lamb is tender.
6. Remove the lamb and let it rest for 10 minutes before carving.
