2 cups chocolate cookie crumbs
1/2 cup unsalted butter, melted
Kit-Kat bars, enough to line the edge of the pan
For the Filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1/2 cup sour cream
For the Topping:
Crumbled Kit-Kat bars
Chocolate syrup or ganache (optional)
Instructions:
Preheat your oven to 325ยฐF (163ยฐC). Grease a 9-inch springform pan.
Mix chocolate cookie crumbs with melted butter until well combined. Press the mixture into the bottom of the pan to form the crust. Arrange whole Kit-Kat bars upright around the edge of the pan, pressing them gently into the crust to secure.
In a large bowl, beat the cream cheese and sugar together until smooth. Add vanilla and mix.
Add eggs one at a time, mixing on low speed after each addition. Fold in the sour cream.
Pour the filling into the prepared crust, being careful not to disturb the Kit-Kat bars.
Bake for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
Remove from the oven and refrigerate for at least 4 hours or overnight.
Before serving, top with crumbled Kit-Kat bars and drizzle with chocolate syrup or ganache if desired. Slice and enjoy!
