Decadent Chocolate Fruit and Nut Energy Bars
Ingredients:
2 cups dark chocolate (70% cocoa or higher), chopped 

1/2 cup almonds, roughly chopped 

1/2 cup walnuts, roughly chopped 

1/4 cup pumpkin seeds 

1/4 cup dried cranberries 

1/4 cup dried apricots, chopped 

1/4 cup shredded coconut 

2 tablespoons honey or maple syrup 

1 teaspoon vanilla extract 

1/2 teaspoon sea salt 

Directions:
Line an 8x8-inch baking dish with parchment paper, leaving an overhang for easy removal.
In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave in 20-second intervals, stirring until smooth.
Stir in the vanilla extract and honey or maple syrup for added sweetness.
In a separate bowl, mix the almonds, walnuts, pumpkin seeds, dried cranberries, dried apricots, and shredded coconut.
Pour the melted chocolate over the nut and fruit mixture and stir to combine.
Spread the mixture evenly into the prepared baking dish, pressing it down firmly with a spatula.
Sprinkle sea salt on top for a hint of contrast in flavor.
Refrigerate for at least 2 hours, or until firm.
Once set, lift the mixture out of the pan using the parchment paper and cut into bars.
Store in an airtight container in the fridge for up to 2 weeks.
