Soft Cinnamon Apple Fritters with Vanilla Glaze 
Ingredients:
For the Fritters:
2 cups all-purpose flour 

1/4 cup granulated sugar 

2 tsp baking powder 

1 tsp ground cinnamon 

1/4 tsp salt 

2 large eggs 

1/2 cup whole milk 

1 tsp vanilla extract 

1 cup apples, peeled, cored, and diced
(about 1-2 apples)

1/2 cup diced apple, optional for extra chunks 

Vegetable oil, for frying 

For the Vanilla Glaze:
1 cup powdered sugar 

2 tbsp milk 

1 tsp vanilla extract 

Pinch of salt 

Instructions:
1. Prepare the Fritters:
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
In a separate bowl, whisk the eggs, milk, and vanilla extract until combined.
Add the wet ingredients to the dry ingredients and stir until just combined. The batter will be thick.
2. Add the Apples:
Gently fold in the diced apples into the batter. You should have small chunks of apples throughout.
3. Heat the Oil:
Heat the vegetable oil in a deep pan or skillet over medium heat. You want enough oil to submerge the fritters halfway (about 2-3 inches deep).
Test the oil temperature by dropping a small spoonful of batter into the oil; it should sizzle and float up quickly. If it doesn’t, allow the oil to heat up more.
4. Fry the Fritters:
Using a spoon or ice cream scoop, drop spoonfuls of batter into the hot oil, making sure not to overcrowd the pan.
Fry the fritters for about 2-3 minutes on each side, or until they are golden brown and cooked through. Flip them carefully using tongs or a slotted spoon.
Once fried, remove the fritters from the oil and place them on a plate lined with paper towels to drain excess oil.
5. Make the Vanilla Glaze:
In a small bowl, whisk together the powdered sugar, milk, vanilla extract, and a pinch of salt until smooth and creamy. Adjust the thickness by adding more milk or powdered sugar as needed.
6. Glaze the Fritters:
While the fritters are still warm, drizzle the vanilla glaze over the top. Let the glaze set for a few minutes.
7. Serve & Enjoy:
