Ingredients:
- 1 cup Arborio rice
- 4 cups whole milk
- 1/2 cup granulated sugar
- 1/4 teaspoon saffron threads
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- Fresh fruits (like mango or berries) for layering
- Chopped pistachios or almonds for garnish
Instructions:
1. In a medium saucepan, combine the Arborio rice, whole milk, and salt. Bring to a gentle boil over medium heat, stirring frequently.
2. Once boiling, reduce the heat to low and simmer uncovered for about 20-25 minutes, stirring occasionally, until the rice is tender and the mixture has thickened.
3. In a small bowl, soak the saffron threads in a tablespoon of warm milk for about 5 minutes. Add the saffron mixture, sugar, ground cardamom, and vanilla extract to the rice pudding. Stir well to combine and cook for an additional 5 minutes.
4. Remove the saucepan from heat and let the rice pudding cool to room temperature.
5. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cooled rice pudding to create a light and airy texture.
6. To assemble the parfaits, layer the saffron cardamom rice pudding with fresh fruits in serving glasses. Start with a layer of rice pudding, followed by a layer of fruits, and repeat until the glasses are filled.
7. Finish with a dollop of rice pudding on top and sprinkle with chopped pistachios or almonds for garnish.
